It’s important to start your day right and that begins with breakfast. I’m having a bit of a health-kick this summer thus need to ensure I start my days with a filling, delicious and nutritious meal. This is a delicious meal from morning to night so don’t feel limited to only making this for breakfast.
Wholewheat toast, topped with smashed avocado and poached eggs. I have a little trick for making poached eggs (if you don’t want to have to swirl the water in a saucepan or add vinegar), roll some clingfilm out over a small dish and crack an egg into it, add a couple drops of olive oil then wrap it up by twisting the clingfilm together and tying in a knot. Then simply add these pouches to a saucepan of boiling water: makes mess-free poached eggs! Serve with tomato and red onion salad on the side with a drizzle of olive oil and balsamic vinegar. Simple, easy to make and delicious!
