Summer is probably my favourite time of the year. Not only because my birthday is smack-bang in the middle but because we all tend to eat so much healthier in the summer months. Perhaps it’s because of the heat, but during the hot and sticky Summer months, I just crave fresh salads and cold ice-tea. The boyfriend shares that same mentality but as a typical male, he needs some form of meat in his meal, thus I am introducing this awesome homemade Proscuitto and Peaches Salad.
Lightly drape slices of proscuitto over a large platter, scatter rocket leaves and olives, crumble feta over the leaves and top with grilled peach slices. This salad is so delicious as it mixes the saltiness from the proscuitto and feta, smokey-sweet from the grilled peaches and mustardy spice from the rocket. No need to overpower this dish with a lot of dressing, just a simple drizzle of olive oil and honey is all you need.
Serve with sourdough crostini, Tomato & Avocado Salad and a chilled glass of wine. Delicious!
