Speck & Goats Cheese Muffins

Sometimes it’s the simplest things in life that can yield such pleasure. For me food isn’t necessarily always about making something fancy and complicated – it’s about fresh ingredients, vibrant colours and exciting delicious flavours. And this dish is most certainly all three!


Cut two english muffins in half and lightly toast under the grill with a little olive oil. Smear a dollop of goats cheese on top and return under the grill to warm. Then, arrange a slice of Speck (a type of cured meat), fresh basil leaves and cherry tomatoes on top. Lastly, gobble it all down and enjoy!


This open-faced sandwich makes a great lunch on its own, a fab starter for a dinner party or even served canapé-style as a handheld pocket of yumminess! Mmmmm delicious!
