Build Your Bruschetta

So we’re full on in the party season at the moment which means there’ll be plenty of catching up with friends in the lead up to the holidays. Whilst bringing in the vino & catching up over cocktails is easy enough, sometimes deciding on the right kind of food can be tricky because you want to make sure you’re not slaving away in the kitchen missing out on socializing. Over the years I have found that sometimes the simplest dishes can be the most effective (and most delicious)! I personally love picking at nibbles – I love antipasti, cheeses and cold cuts so this “Build Your Bruschetta” is perfect!

Serves 4

  • Country Loaf – sliced & grilled
  • Olives
  • Sundried Tomatoes
  • Prosciutto Slices

For the Tomato Mix: 

  • 3 Ripe Tomatoes – de-cored & chopped
  • Handful of chopped basil
  • Olive Oil
  • Salt & Pepper

For the Walnut Mix:

  • 1 tub Ricotta
  • 2 handfuls grated parmesan
  • 1 small bag chopped walnuts
  • Salt & Pepper

For the Artichoke Mix:

  • 1 jar artichoke hearts – finely chopped
  • Handful of chopped mint
  • Olive Oil
  • Juice of 1/2 lemon
  • Zest of 1 lemon

How to:

  1. Individually mix the tomato, walnut and artichoke mixes.
  2. Serve the mixes alongside the sun-dried tomatoes, olives, proscuitto and slices of grilled country loaf.

So delicious, so easy to make and perfect for any dinner party! I love love love this dish – it’s perfect even for a chilled night in with a bottle of wine!
